EXPLANATION OF PRICING
Purchasing meat directly from a farmer, as opposed to a big box store, varies in many ways, including how it is priced. Pigs are halved and weighed. Your cost is based on this weight, known as the hanging weight.
Please keep in mind that the hanging weight differs from the final weight of cuts. To produce cuts, our butchers trim and discard unwanted parts such as bones and excessive fats as requested. As you can see from our price list, there is also a cost difference in the variety of cuts and curing.
